\nWe are seeking an ambitious, commercially minded Restaurant & Bar Manager to lead our front-of-house operation, inspire the team and drive exceptional guest experiences while delivering strong financial performance.
The Opportunity\nThis is a hands-on leadership role responsible for the day-to-day management of the restaurant and bar. Reporting directly to the Hotel Operations Manager and working closely with the Head Chef, you will lead the front-of-house team, ensuring consistently high standards of service while maximising revenue, profitability and guest satisfaction.
\nThis role is ideal for someone who enjoys leading from the floor, developing people and building a destination venue.

- Conduct regular team briefings, one-to-one meetings and performance reviews. \n
- Create rotas that balance service excellence with labour efficiency. \n

- Ensure all team members are trained to company standards. \n

- Deliver exceptional hospitality throughout every service. \n
- Build strong relationships with regular guests and local businesses. \n
- Handle guest feedback and complaints promptly and professionally. \n
- Ensure consistently high service standards across breakfast, lunch, dinner and bar operations. \n
- Maintain excellent online reputation through outstanding guest experiences. \n

- Drive food and beverage revenue. \n
- Increase average spend per guest through effective upselling. \n
- Develop promotions, seasonal events and themed dining experiences. \n
- Monitor daily sales, labour costs and gross profit performance. \n
- Manage departmental budgets and achieve financial targets. \n
- Analyse sales reports and implement actions to improve profitability. \n
- \n
- Oversee all daily restaurant and bar operations. \n
- Ensure smooth service during busy periods and private events. \n
- Maintain presentation standards throughout the venue. \n
- Ensure food and drinks are served to specification. \n
- Coordinate closely with the kitchen to ensure efficient service. \n
- Maintain high standards of cleanliness and organisation. \n

- Develop and maintain an attractive drinks offering. \n
- Manage wines, beers, spirits, cocktails and non-alcoholic beverages. \n
- Work with suppliers to introduce seasonal products and promotions. \n
- Monitor beverage margins and pricing. \n
- Ensure cellar management and product quality standards are maintained. \n

- Manage purchasing and stock ordering. \n
- Conduct weekly and monthly stocktakes. \n
- Control wastage and minimise losses. \n
- Monitor beverage and food gross profit margins. \n
- Ensure accurate stock rotation and storage procedures. \n
- \n
- Ensure compliance with licensing laws and Challenge 25. \n
- Maintain Food Safety and Health & Safety standards. \n
- Ensure all operating procedures are followed. \n
- Support audit readiness and company compliance standards. \n
- Maintain high standards of hygiene throughout the operation. \n
- \n
- Previous experience as a Restaurant Manager, Bar Manager or Food & Beverage Manager. \n
- Strong leadership and team development skills. \n
- Excellent knowledge of restaurant and bar operations. \n
- Commercial awareness with a proven ability to drive sales and profitability. \n
- Outstanding communication and organisational skills. \n
- Ability to remain calm under pressure. \n
- Passion for delivering exceptional guest experiences. \n
- \n
- Hotel restaurant experience. \n
- Strong wine, cocktail and premium beverage knowledge. \n
- Personal Licence Holder. \n
- Experience managing weddings, functions and events. \n
- Knowledge of EPOS systems and stock management software. \n
